White Fairy Cocktail

Inspired by the Green Fairy, the famous absinthe cocktail, this version is lighter and in the colours of the Alps.

Place all the ingredients in a shaker, shake the mixture without ice to emulsify the egg white. Add ice and shake the mixture again.

Strain into a pre-chilled Martini glass.

Garnish with star anise and a lemon twist.
