White Fairy Cocktail

Inspired by the famous Green Fairy cocktail made with absinthe, this version is lighter, with more typical Alpine colours.

Ingredients

3cl Pastis des Alpes
2cl water
2cl lemon juice
½ egg white
2 dashed aromatic bitters

Put all the ingredients in a shaker, then shake the mixture without ice to emulsify the egg. Now add ice and shake again. Strain into a pre-chilled martini glass. Decorate with star anise and lemon peel.
